Back in the late '80s, Richmond's idea of fusion was a chalupa appetizer and bratwurst main dish at the Texas-Wisconsin Border Café. Along came Sosie Hublitz and a little later Q Derks (pictured in 1994) of Avalon. They offered us lemongrass and saffron; they infused haute cuisine with the punk-rock sensibility that still reverberates. Derks left the restaurant scene for private catering, and Hublitz moved away to do the same in the Outer Banks after Tropical Depression Gaston helped sink the beloved but short-lived Kitchen Table. Hublitz is back, however, scouting locations for a new hush-hush venture that promises gourmet comfort food on a whole new level.
