The Ripp family, from the early days of O'Brienstein's (then Havana '59) and Can Can Brasserie, have always known that in this overcommitted and over-caffeinated world, what customers really want when they go out is a good time. A lot has changed since those days of bagels and frozen daiquiris, and the ingredients are fresher. But über-chef Chris Ripp (pictured) sums up what makes the over-the-top theatricality of places like Havana and Can Can so successful: "Some people know food and some people know wine, but everyone knows entertainment."
