Choosing a beer to accompany a meal has never been about perfection for Jermaine Wallace, manager and beer buyer for River City Cellars in Carytown. He says people, for some reason, seem to think it's like brain surgery or rocket science. They believe selecting beer has to do with some mysterious process. But Wallace simply chooses beers that play off the flavors of meals.

That's what he's done for the upcoming Fat Tuesday Beer Dinner at Ipanema Cafe. Wallace, who's worked at River City Cellars for the last two-and-a-half years, has selected five beers from around the globe to accompany a four-course dinner.

The dinner includes olive-barley risotto with prosciutto over homemade polenta and frisse with roasted pecans with caramelized shallot vinaigrette. The scrumptious international assortment of suds includes Ipso Facto (Holland), Stoudt's India Pale Ale (United States), Abbaye du Val-Dieu Brown (Belgium) and other lagers complementing the meal.

Don't think that you'll only have a few swallows of these drinks. Wallace says dinner-sized portions will be served with refills every so often. And if you really like a beer, you can order some right on the spot from River City Cellars.

If you want to drink up and chow down at Ipanema this Fat Tuesday (that's Feb. 12), you'd better hurry and make your reservation by the Feb. 7 deadline. The $41 cost includes taxes and gratuity. It starts at 6:30 p.m. Ipanema is located at 917 W. Grace St. Call 355-1375 for
